My New: "New Mexico" Series
Seven months ago I got a job in New Mexico. I live in Santa Fe and have a 40 minute commute to work every day. I had never been in the southwest of the US, and this was a shocking experience for me (in both good and bad ways). New Mexico is the most isolating place that I have ever been in, but it is also one of the most beautiful places that I have ever seen.
When I was about to move here, I tried to look up information about living in New Mexico online. I wanted to see where it was best to live, what there was to do, etc. I found almost nothing. Some blogs had a paragraph and a couple of pictures where they barely showed anything, but I feel like there could be much more.
Since I am leaving the state in three months, and I don't know if I will ever come back, I have decided to try to do/see as much as I can. I will start a new series to try to contribute with a little bit of much needed information. Maybe in the future somebody will be able to look at my blog and find some of the information that I couldn't find seven months ago (or at least some fun tips).
p.s. If anybody knows of anything special about New Mexico that I should see before I leave, let me know about it!

Lemon Pudding Cake
To begin my baking challenge I decided to make a recipe that I found in a Real Simple magazine. It is a really simple (hehehe) lemon pudding cake. I chose it because I already had all the ingredients at home, and I must say it was the perfect recipe to start my challenge with!
I ended up eating it before being able to take pictures of it, but I got one of the last piece. The mix of cake and pudding was so strange that I had to show it.
It was super fast and easy, and it turned out great!

Whenever I find out that I will go through a great change in my life, I get so excited that I stop being able to do anything. For example, when I found out that I was going to move to the US, I dropped out of my university, even though I would have had plenty of time to finish the semester. When I found out that I was going to move to New Mexico I stopped going to work, even though I could have worked a bit longer and saved some money for the move.
This time is the worst. I am moving to an incredible place where I never even dreamed of living, with my incredible boyfriend, and I am finally going to be able to settle in one place for a while! There are still three months left until my move, but I have reached the point where I can't concentrate on anything but googling "Living in the San Francisco Bay Area".
This means trouble. I have a lot of work to do! so I have decided to get into something that will distract me for the next couple of months. I'm going to start baking. I'm going to bake at least twice a week.
Why Baking?
Well, first of all, I have always liked baking. The problem is that I have never felt really comfortable in the kitchen, so baking anything is usually a whole day challenge for me. First I prepare mentally; this takes all morning. Then I prepare my kitchen so that it looks like I'm in a cooking show. I put everything in individual containers, I clean, I prepare something, I clean, I google everything to make sure I'm doing it right, I clean, and so on. By the end of it I'm exhausted, and I've worried so much and taken so long that I look back at the whole process as a huge cloud of confusion.
I believe that my problem will be solved if I actually get used to baking often, without worrying much before, without worrying about cleaning until after its all done, and without googling every single question that pops in my mind.
Why now?
This fall I will become a PhD student. I will graduate at almost 30 years old. YES. THIRTY. Now, I know I wont have too much free time during these upcoming years, and because of that I want to get to the point where I can come back from a long day of work, bake something in 30 mins, and enjoy it with my lovie while I watch a movie or relax. My goal is to get to the point where I can do this naturally.
Until July I will keep working 8-5. So my challenge will be to get back from work, cook lunch for the next day, exercise, shower, clean, read, aaaaand BAKE somewhere in between all that! I wont do this every day, but at least a couple of times a week, starting now!
This challenge will keep me distracted while I try to stay interested in my responsibilities before moving. It will give me something else to google: I will look for recipes instead of tips about life in San Francisco!!!!
Today I made my first baked goodie!

We are Moving To: The San Francisco Bay Area
It has been decided. We are moving to the Bay Area at the end of the summer. We will try to live in that yellow house in the middle of the picture, but if it costs more than $500 a month then we will have to settle for something else.
The next five years will be exciting, hard (no, I will not be able to pay the rent for the little yellow house), and probably some of the most important years of our life. So I am glad that we chose such an amazing place to spend them in.
Maybe one day somebody will read this little blog and think "oh! I have a tip that may help them!" or "hey! I know of something cool they should do/see!". If this is the day, then please share, even if just through a private email. But until then I guess I'll settle for asking google what it is like to live there.
I will try to document the whole moving process on a new "Moving to the Bay Area" series.
It probably wont start until the moving date is getting closer, but maybe I'll post a thing or two before that, since I can't wait!

How I Keep Myself from Eating Out: My Special Salad!
For me, one of the hardest things about living in a budget is not eating out. It's not that I like eating out too much, because I really prefer eating at home. The problem is that I was never too passionate about cooking. Actually, it was more of a burden to me most of the times. During my four years in college this wasn't a problem, since I didn't have a car, so I would only get groceries twice a month. This meant lots of instant/long shelf life meals and lots of being hungry. But now that I have had a job for a bit, and I will start grad school I feel like I have to start better habits, especially if I want to stay healthy until I graduate.
So here is what has been my lifesaver salad for almost a year now. I eat this salad at least 5 days a week, and I know it sounds like too much, but it has been great for me. What I do is that every sunday I cook a LARGE amount of a nice main dish (my favorites are soups, but I also make fish, meat, chicken, all these fancy things). Usually I make enough for 2-4 meals. BUT, my trick for making it last longer is that before every meal I eat a huge bowl of this salad! Because of this, I don't need as much afterwards to fill up, and instead of eating huge portions I end up eating healthy portions of my main dish! Doing this I can make a 'Sunday Batch' last me 3-5 meals!
It also doesn't hurt that the salad is surprisingly delicious. Even my boyfriend got obsessed with it, and now he craves it sometimes! (He calls it "Your
Salad©"). Here is how I make it, and how I prepare the ingredients so that it takes me literally 2 minutes to make it in the morning:
Ingredients: - Fennel - Lettuce - Carrots
Dressing: - Lemon Juice - Salt -Olive Oil
Usually on Sundays I will chop off an iceberg lettuce head, a couple of carrots, and a couple of fennel heads. I put each one of the chopped ingredients in its own container, and store this in the fridge. For the lettuce I use this wonderful green container that manages to keep it fresh sometimes even for two weeks! For the carrots and fennel I use regular ziplock containers.
The dressing is magical. I didn't use to like salad very much, because I hate all the dressings out there (most of them have vinegar, and I HATE vinegar), but salad without dressing is too bland. So when my sister used this on a salad I was sold. It makes for the most subtle and refreshing dressing. You just have to make sure not to put too much of anything. About a tablespoon of lemon juice, a pinch of salt and a tablespoon of oil will be good for one bowl.
I got this lemon/lime juicer from Target, and its perfect. I will squeeze a whole lemon and store it in the fridge. Any time I make my salad I just pour a bit from it, and this way I don't even have to get my hands lemony every morning! Also, If I am feeling like it, some mornings I can make myself some lemonade in two seconds!
So in the mornings it goes like this. I wake up super late and have to rush to get out of the house. I get all three containers out, I get a handful of each thing (with clean hands of course) and throw it in a ziploc container, then I put the salt, lemon, and olive oil in it. Finally, I shake the container so that the dressing mixes up and coats all my veggies. And thats it! I bring this to work and eat it before eating anything else!
It is also pretty easy to make small changes to it. Some people don't like fennel, so they can use cucumbers, onions, or whatever they like! My boyfriend likes putting avocado and rice vinegar on his.
I just like to do it the way I showed here, especially because it takes me too much effort to brainstorm about putting other ingredients in, and this recipe is all about making something delicious without making an effort! :D

How to Enjoy Camping: Angry Hungry - Stay Full!
One thing I have noticed in a lot of people is that they don't notice when they are hungry, but everyone around them does. Speaking for myself, when I am hungry I become a monster. Hunger makes me easily irritable, and just unhappy in general. When getting used to camping, we are immersed in an environment which is not especially conformable. If we add to that the emotional instability caused by hunger we have disaster. Because of this, you should try to keep your tummy happy at all times. To me this means eating constantly in small portions. Waiting for a meal means waiting until you get hungry, and in my case that is not a good idea.

How to Make Plantain Chips (Tostones)
You can eat them with ketchup, or any other dip. But my favorite is cheese! some hard, salty chese like feta, is perfect. So here it goes!
1. Pick the greenest plantains you can find. Plantains are amazing because if you pick them super ripe (LOTS of big black spots) they will be super sweet, and if you get them while they are green, they can be made into salty chips!

How to Enjoy Camping: an Introduction
Growing up I considered myself an outdoorsy person, but actually only went on adventures outdoors for school trips a couple of times a year (only went camping once). These trips only lasted until high school graduation, about 6 years ago. However, I kept on telling myself and others that I loved camping and outdoor activities. Finally, a couple of years ago I went on a camping trip to southern Illinois. And I Hated it!
During the whole camping trip I felt dirty, tired, hungry, and overal just incredibly bitter. I couldn't enjoy any of the activities that the other people were enjoying so much. It was a revealing experience. I do love the idea of camping, but I felt miserable!
Since then, i've gone camping many more times. Every camping trip has been a huge learning experience. Small new details have made my trips incredibly more enjoyable every time. I am still far from an expert, but I thought I would share those small tips that make it all the more pleasant for me.
"How to Enjoy Camping" will be an ongoing series for those who haven't given up on trying to enjoy what others seem to consider one of the most fulfilling activities. I will not teach you how to camp! But instead I will show you the tips and tricks that I wish somebody had taught me at some point!
Note: I'm sure that some of my tips would seem obvious to many 'more experienced' campers, but they weren't to me, so I will put them out here in case they can be helpful to others.
