Pumpkin Whoopie Pies


I've been holding my breath waiting for Lilo to move with me permanently. He will join me for my last month in New Mexico, and then we start our summer moving process, which will involve driving across the country! Like in the movies! Lilo was supposed to leave Illinois yesterday and drive to Texas, and then tomorrow he was going to drive from there to New Mexico. But of course, his car broke down in the middle of Oklahoma with nothing around him but a Walmart, a hotel, and a repair shop! They managed to make his car run well enough for him to get to Dallas, but now he is stuck there and wont be able to join me until the car is fixed. I feel like a child who was promised ice-cream after dinner, dreamed about the ice cream all day, and at the end of dinner was told "Nope, no ice-cream tonight" 






So now, to distract myself from the disappointment, I went out and bought enough ingredients to bake ALL weekend. I also bought materials for a special sewing project (nope, I don't sew). We'll see how that goes.  


To kick off the weekend, I downloaded an AWESOME app called "Cake Days" from The Hummingbird Bakery. I have one of their cookbooks and love what I have made from them, so I was very excited about this App. I know we are in the exact opposite of Fall, but I wanted to bake whoopie pies and the only type that got my attention was Pumpkin. SO I MADE THEM!


Even though I have never had whoopie pies before, I think these came out really good. They cake is not too sweet, so the cream cheese filling doesn't make it overwhelmingly sweet. They are sooo soft and moist. The best part of it is how easy they are to make! 

  

Next in line are red velvet cupcakes! We'll see how that goes!
